Every food we eat in one way or the other influences our blood sugar levels. And not paying attention to the vital detail of our diets could add to a cluster of conditions that increases the risk of metabolic syndrome diseases such as Diabetes mellitus, Stroke, Heart diseases, Obesity, etc. Little information is provided of the Glycemic Indices (GI) and Glycemic Load (GL) of many locally consumed Nigerian diets, and in order to provide more data that can effectively enable the use of GI and GL in the management, treatment and prevention of diseases together with other dietary recommendations, there is need for this study. The book, Dietary Recommendation for Managing Blood Sugar Levels, is a documentation of experimental findings on the Proximate composition, Mineral content, Glycemic Index and Glycemic Load of two staple Nigerian diets: Beans-corn porridge and Corn pudding. It suggests reasons why foods should be optimized and combined where necessary to improve the nutritional qualities in the light of their glycemic impact. The research findings so carefully documented make this book an interesting read for public health care workers, dieticians and the likes.
