Fruits and Vegetables harvested requires adequate and advanced technologies for post harvest processing so that it can minimize or reduce the qualitative and quantitative losses that occurs during harvesting. Due to improper handling, packaging, storage and transportation about 40% of the of the fruits and vegetables are wasted all over the world every year. Intensive importance is needed to develop the advance post harvest technologies for enhancing global food and nutritional security by uplifting the GDP of the agricultural produce of the world with reduced losses of edible fruits and vegetables. The current book gives information about the important post harvesting technologies to maintain qualitative and quantitative aspects of fruits and vegetables.
